Paleo Coconut Pancakes

I love breakfast. But when youre going gluten-free, wheat-free, or paleo, there arent a lot of options. This recipe rocks when you need pancakes to save you from a blah breakfast morning. Yes, you can need pancakes. Great with syrup or fruit sauce. Let them cool and spread with cashew butter, sunflower butter, or even preserves for tea

Paleo Coconut Pancakes Ingredients

  • cup coconut flour

  • 1 teaspoon baking soda

  • teaspoon salt

  • 4 eggs, separated

  • 2 tablespoons butter, melted

  • 1 cup coconut milk

  • teaspoon vanilla extract

  • 1 teaspoon coconut oil, or as needed

How to Make Paleo Coconut Pancakes

  1. Combine flour, baking soda, and salt together in a bowl.

  2. Beat egg yolks and butter together in a bowl until smooth; add coconut milk and vanilla extract and beat until smooth. Stir milk mixture into flour mixture until batter is evenly combined.

  3. Beat egg whites in a bowl until foamy, about 2 minutes; gently fold into batter.

  4. Heat coconut oil in a skillet over medium heat. Drop batter by large spoonfuls into the skillet and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

  • I did not care for the strong taste of baking soda. Not sure if it can be reduced and still have the right consistently

  • This pancakes were so completely awful. I took one bite and threw them out. You could taste the baking soda and they tasted very eggy. Not good at all. Dont waste your ingredients on this recipe.

  • After searching for a low carb pancake I found this recipe. The only change I made was using 1/2 teaspoon baking soda rather than full teaspoon. These were a bit dry but overall I was very pleased with the taste and texture. You can really taste the coconut which is a good thing for me. I topped with sugar free syrup. These really satisfied my pancake craving. I will definitely be making these again.

  • We made this recipe once and We loved it, well some of us. Yes, I tasted the baking soda some, now some of you might think Im alittle odd, but the truth is I just like that flavor. But now that we are making it again Im going to add a little less baking soda see if it still turns out good. Im thinking if the first few dont turn out well we can easily add more. Im doing a quarter teaspoon less per batch. But we liked it so well that Im making it 4 times the recipe this time. Im so glad to find some recipes that have a good flavor that I dont have to keep trying and failing all the time.   • These cooked well, but they tasted more coconutty than i prefer in a pancake, and since Im not on a paleo diet i prefer the regular gluten free pancake mixes, but it was fun trying a new one.

  • Ive experimented with a few coconut pancake recipes, and found this one to be easy to make and tasty If I made again, I wouldnt add salt, because my butter was salted... Something I failed to think about ahead of time.
